Two of my favorite joys in life… Food & Wine! Angel Fire Resort is inviting all of us to experience lots of both this weekend at the FOOD & WINE ROUNDUP. Starting with a VIP Dinner on Thursday evening, this series of events are guaranteed to put a smile on your face, food in your belly, wine and craft beers to taste and the opportunity to kick up your heels. And it promises to educate you on the “How To’s” of barbecue. There are several cooking demonstrations scheduled where you both learn and eat! These include grilling, dutch oven cooking, a mushroom hunt & lunch demo, and a chuck wagon breakfast. Also included in the weekend events are Wine & Spirits tastings, Reserve Tastings, and a Grand Tasting where it all comes together in one location. Then next weekend you can go back to your own grill equipped to boast a meaner barbecue! Plus you will be better educated as to which wine, beer or spirits to serve with the foods you cook… Winning in all categories!
For the Food and Wine Roundup, the Resort is bringing in guest celebrity chefs from east and west. Kicking it off at 9:30 am on Friday, August 25, is Meathead Goldwyn, author of NY bestseller book, “The Science of Great Barbecue and Grilling”. He will demonstrate how to prep meats for the smoker and grill.
I spoke with Meathead last Friday. He shared with me that he has his Master’s in Art & Technology. He considers himself a culinary artist, well versed in the science of what happens when “heat hits meat”. He told me there is a science to the art of grilling and the temporal arts are similar to cooking. “To be an artist you must first be a craftsman but you must understand the science behind it”, said Meathead. He also served as Wine Critic for the Washington Post and the Chicago Tribune for many years. He says, “I’ve been eating and drinking all my life!” He is looking forward to his visit to New Mexico to eat an authentic green chile cheeseburger and to check out the art scene in Santa Fe before he heads up the mountain to Angel Fire.
At 11:30 am on Friday morning August 25, after his demonstration Meathead will join celebrity guest chef from California, Harry Soo, famous for “Slap Yo’ Daddy Barbecue”. Together they will slow-cook a barbecue lunch for you to savor on the deck of the Zia Bar, located on the mid-level, in the base area of the Angel Fire Ski Resort, just outside of the Village Haus. Yum!
Following lunch, west coast favorite pit master, Harry Soo will take over, demonstrating how to prepare his favorite cuts of Kyzer Farm prime pork. Enjoy lunch before you learn the art of transitioning from grill to plate!

Roundup is delighted to welcome husband-and-wife Chef team Jen and Evan Doughty of Santa Fe’s historic Palace Restaurant and Saloon. Chef Evan will be at the Hensel home and Chef Jen will be at the Rush home. Both chefs will be working with A Bar N Ranch’s wagyu beef and Kyzer Farm pork in their respective menus. The evening will commence with cocktails on the veranda or garden followed by specially selected fine wines to compliment the duo’s incomparable culinary creations.

Roland and Sandra Saul, part time residents of Angel Fire from Hereford, Tx, will prepare breakfast on their Studebaker Chuck Wagon. Enjoy the crisp morning mountain air and sumptuous smells and tastes of a hearty breakfast from the masters of rustic chuck wagon cooking at Frontier Park.
8:30 am to 1:00 pm Mushroom Hunt & Lunch Demo
Explore the mountains while you forage for mushrooms alongside Chef Tom Bowles who owned the Roasted Clove in Angel Fire, several years ago. Joining Tom will be Cheryl Jamison, a celebrated New Mexico foodie and cookbook author. They will prepare special dishes for lunch featuring the very mushrooms you harvested.
10:30 am to 12:00 pm – Dutch Oven Cooking Demo
Join Angel Fire’s own Kent Smith and Mike Gilcrease for a refresher on how to cook, clean and take care of your beloved Dutch oven, and of course, taste some of their incredible wild game recipes. Take home a complimentary copy of their cookbook full of Southwest recipes at the end of the class!
11:00 am to 1:00 pm – Craft Beers Seminar & Lunch
Spend a few hours on Saturday sipping an assortment of beers produced by the finest brewmasters in New Mexico. From the lightest ales to full bodied Porters and Belgian Sours, there will be something for every palate. Once you’ve wet your whistle, dig into a delicious pub fare lunch.

Not to be missed! Choose your own adventure at this Sunday Brunch special feature with either Angel Fire Vodka’s “Build it Yourself” Bloody Mary bar or specially-concocted Bloody Marys, all with handcrafted ingredients and garnishes from Chef Kevin McCaffery and Kyzer Farm bacon.
